Seitan ~ The Meat Free Marvel
Seitan is a wonderful and versitile meat substitute that is high in protein and is made from Gluten, the main protein of Wheat. It has a completely different taste and texture to soya based meat alternatives and can be shaped before cooking, depending on how you want the product to look.
Although not widely available commercially as a fresh product, you may have come across cooked Seitan and not been aware of it. Mock Duck is a prepared form of Seitan that is sold in tins and is widely available in Asian supermarkets. Seitan has been used in China as a meat alternative for many years.
If you live in an area where prepared Seitan products are not available then there is a very simple solution. Make your own! The main ingredient in Seitan is Wheat Gluten and this is now readily available online.
I use the lowcarb megastore in the UK to purchase my Gluten Powder/Flour. If you search on the net you will find other companies that have this product readily available.
And below is my own recipe for Seitan.
This new and updated recipe for seitan is different in both taste and texture. I have used different seasoning and added soya flour to make for a more complete protein. Use in hot and cold dishes. This is actually great when sliced and eaten in a sandwich.
INGREDIENTS
1.5 cups vital wheat gluten - Here is where I purchase mine
1/2 cup nutritional yeast
1/2 cup soya flour
2 heaped tablespoons tomato ketchup
1/2 teaspoon marmite
2 heaped teaspoons vegan gravy granules
3 heaped tablespoons vitalite (or your prefered vegan spread)
1/2 teaspoon black pepper
1/2 teaspoon garlic granules
Pinch dried sage
Pinch dried thyme
2 tablespoons kelpamare seasoning ~ http://www.healthysupplies.co.uk/kelpamare-swiss-seasoning-avogel.html (if not available use soy sauce or liquid aminos)
200ml water
METHOD
Excluding the water, place all of the ingredients in a food processor and whiz for 30 seconds to combine.
Slowly add the water and when all of the water has been added, continue to whiz for a further 1 minute until totally combined and the gluten has been released.
Remove from the processor and kneed for 1 minute. Form into a ball and wrap well in foil.
Place in a pre-heated oven at 150 degrees Celsius for 1 hour. Turn off the heat but leave in the oven for a further 1 hour.
Use as required.
